This is above all the season for pruning. The grapevines, trained on vertical trellises, are given what is called a ‘mixed’ or ‘spur and cordon’ pruning, leaving one long branch and one spur, then tied to the wires.

The olive trees get only a light pruning, just enough to thin the foliage.
